PARTY SANDWICHES.

SAVOURY. Grate some cheese or use cream cheese; add a little melted butter and beat well; beat to a smooth paste with salt, pepper, cayenne, made mustard, and a little sherry. Take some meat off a lobster or use. tinned lobster and flake it finely, season with cayenne, salt, and chopped parsley; mix with a little whipped cream to make a smooth paste, 'and spread on water biscuits or brown bread. Similarly, mix grated lean ham with highly seasoned cream and apple chutney. These are delicious open sandwiches : Boil two eggs very hard, cut in halves, and remove the yolks; cut the whites into thick rings and sieve the yolks; beat the yolks to a smooth paste -with a little cream, add pepper and chopped gherkins to taste. Or use meat extract instead of gherkins. Spread this on cracker biscuits or slices of bread cut into small rounds; on top place a ring of white of egg and put a stuffed olive or anchovy inside. Boil some eggs hard and rub through a fine sieve ; mix with a little melted butter and anchovy sauce and season with cayenne. Put equal quantities of chicken and ham, veal and ham, or chicken and tongue through a sieve; chop some mustard and cress and add it to the meat; add a little pepper and enough mayonnaise to make a stiff pasjte. Spread on brown or white bread. SWEET. Mash two or three bananas with a fork; add lemon juice and sugar to taste and a spoonful or two of chopped -walnuts; spread on brown bread. Stone and chop some dates, add chopped walnuts and a little preserved ginger; add a little ginger syrup to make a stiff paste. Grate some mixed nuts and add generously to thick honey. Whip a little cream until thick, add some chopped nuts and cubes of tinned pineapple cut small.
