A RECIPE.

PEACH JAM. Peel the fruit and cut into small pieces. Place overnight in a deep dish, and cover with soft sugar, using half a pound of sugar to each pound of fruit; next day turn all into a preserving pan and boil slowly until the jam is done; the time will depend on the quantity being made. No water is required for this preserve, the sugar being added overnight will draw out enough juice without using any water ■to melt the sugar. To test whether it is ready, put a little on a small plate and put in a cool place to jell.
