EGG JELLY.

Take i packet lemon jelly crystals, loz lump sugar, 1 egg, one-third pint water, rind and juice ol‘ 1 orange. Place the jelly crystals in a saucepan with water, juice, and rind of the orange, sugar and egg well beaten. Stand on the side of the stove and keep beating with a fork until quite hot and the crystals incited. Pour into a netted mould and turn out when cold.
