PINK CREAAI
This makes a delightful dainty for a dinner party. Boil slowly Jib of rice in 1 quart of milk. Add 2oz each of butter and sugar, and a few drops of vanilla. Stir for twenty minutes, after it is well boiling, until it becomes a smooth custard. Colour it pink with cochineal, and then spread some raspberry jam on a glass dish, after which the rice should be poured over it. When it is quite cold, sprinkle it with desiccated coconut.
