The revelations in Upton Sinclair's novel, " The Jungle," induced President Roosevelt to send Commissioners to investigate the methods at the Chicago Packing Works. Their report is the basis of legislation to be immediately submitted to the Legislature. Newspaper details show that bogs dying from cholera were converted into lard and grease. For sardine oil putri fled hams were chemically treated and thus rendered odourless. Bad meat was dyed and potted ham made from mouldy beef. Cattle which were dying of disease were converted into tinned beef, and sausages were made from the floor scrapings. The investigations further showed that when operatives were mutilated in the machinery the works were not stopped. The result was that the human flesh was mixed with the canned food and sausages.
