Cheese Factories.
The Cambridge correspondent of the Auckland Herald writes:— " The new cheese factory 1 , started. by- r Messrs Fischer op Mr Gane's farm, on the Swiss system of clieese-making, hasnowbeen running since the commencement of the year, and has proved beneficial not only to the proprietors but to the neighbouring farmers also, who receive a'higher price for their milk than is given 'at any other cheese factory m. Waikato. A large,, quantity of cheese has been made. Three" sorts of cheese are turned out .from- the milk. Largo cheeses, or grindstones,; as they are spoken of by the settlers, weighing 60 to:70 lbs-each ; 'bricks,' as the second kind are" called, being cheeses of the shape and size of ordinary building bricks', and' weighing. 2,lbs each ; and thirdly green cheeses. The first made of the. first and third kinds will not be ripe' enough 'for saje _ until*, another '- v three weeks. Of the ' bricks** which' ripen: quicker, the Messrs Fischer have sold half a ton, which have realised 9d iper lb, wholesale, and is highly spoken > of, arid' they 'expect tS- be able to; i place the' whole of their cheeses upon the market at equally; satisfactory. rate 3. :; It will fee easily seen, .therefore, how with ;the lnanufaoture .' of the ; 'Swiss .cheese; the Messrs Fischer , ckix . afford .to - give so high a price 'for the milk supplied.Nor must it be: forgottbn that the operations are carried -on m an:inß,xpensive building, and were started with a capital for piant, &c, considerably under .£2OO. Settlers m thinly -populated localities desirous of starting, cheese factories, 'and factories already at work, may yet' learn something from 'the" Pukerijnu Swiss Dairy factory.
