Cheese Factories.

The Cambridge correspondent of the Auckland Herald writes:— " The new cheese factory 1 , started. by- r Messrs Fischer op Mr Gane's farm, on the Swiss system of clieese-making, hasnowbeen running since the commencement of the year, and has proved beneficial not only to the proprietors but to the neighbouring farmers also, who receive a'higher price for their milk than is given 'at any other cheese factory m. Waikato. A large,, quantity of cheese has been made. Three" sorts of cheese are turned out .from- the milk. Largo cheeses, or grindstones,; as they are spoken of by the settlers, weighing 60 to:70 lbs-each ; 'bricks,' as the second kind are" called, being cheeses of the shape and size of ordinary building bricks', and' weighing. 2,lbs each ; and thirdly green cheeses.
