Considering the great difference m the size of eggs, to sell them at so much a dozen certainly does look somewhat absurd, j and especially asithey might so easily^ be weighed. When a paper like the i Scientific American advocates the weighing of eggs, the subject is worthy of consideration. That paper recently said that there seemed to be no good reason why the general practice of Bellingeggs by the dozeu should not be superseded by the more rational one of selling them by weight. There is from 20 to 30 per cent, difference iiiiWeiglit of eggs, yet the custom is almost universal of selling them by the dozen at a uniform price. Even duck's eggs, which are much larger, and regarded by some as richer, bring no more than the smallest hops' eggs of not half the weight. In California, eggs, fruit, and many qther articles that are hero sold by the dozen, the bunch, or Tny measure, are sold by weight. The practice (says the American Agriculturist) is a good one, and. works Wneficially for all parties, especially for the producer. Lt operates as a premium upon the cultivation of the most productive varieties of fruitgj vegetables, and farm stocks. The farmer who is painstaking with hi* .poultry and gets the largest weight m eggs has a fair reward, for his skill and industry.
