At a recent meeting held m Waikato to explain the principle on which cheese factories are worked, a practical speaker thus enumerated the advantages which result from the establishment of such iiidustrieß : — Ist. — Improvement m the value of land, consequent on the increased value of produce. 2nd. — r Greater uniiormity m the quality of cheese. 3rd.— The general introduction of uniformity of system, better plant, skill, and supervision. 4th.— That m working up milk m such lar c quantities, and on the factory system, a larger yield of curd can be produced m private dairies, and that the article cf cheese can be produced at less cost m bulk than m small quantities. stb. — The advantage of buying milk m bulk, and of obtaining materials on the best terms. 6 th.— The saving m cost of labour, which being sprea-i over so large a production, is capable of bring r?cuced to tbe minimum. And lastly, to promote a healthy emulation, creating a feeling of mutual independence, encouraging intercourse, and introducing habits of system, enquiry, calculation, regularity, and order among the farming circles of this country. With such substantial benefits m view, is it not strange that the public of this portion of Manawatu do not combine to inaugurate a factory, or several of them ?
