The above firm whose "K" jams are familiar in our mouths as household words, have lately placed upon the market new goods consisting of Sauce and Mushroom Ketchup. The Sauce has been "in the wood " for over twp years, sauce like wine softens and matures; with age. Almost everyone in New Zealand knows the firm has a name to lose, but the Managing Director, Mr Kirkpatrick, .did not intend to accept any risk in issuing a product from their factory until it had arrived at the high state of maturity afcwhich it ought to be placed upon the market. The "K " Sauce and Mushroom Ketchup in company with their other manufactures were exhibited at the Dunedin Horticultural Society's Exhibition, where they were awarded the gold medal, the judges specially complimenting the manufacturers xm the success attained. The "K" Sauce is of much piquancy and good body ; it is said by those who have tried it to impai t a zest to meat foods that will stimulate an appetite in the most fastidious, or tickle the taste of the greatest connoisseur and there is no doubt that in - a few years Messrs Kirkpatrick and Co., will become as noted for their sauces as they are to-day for their "K " Jams. The success of the condiment should remove "a reproach that one of the most universally used sauces had to be imported. The Mushroom Ketchup is guaranteed absolutely pure and is very strong with a fine flavour. Messrs Kirkpatrick and Co., /have lately gone in for Coffee and Spices, and their " K " Baking Powder is in great demand. The firm has lately been appointed agents for Messrs F. H. Faulding and Co., of Adelaide, the well-known and popular manufacturing druggists, jjwhose Eucalyptus Extract is said to surpass all others in strength and quality. Faulding's Cloudy Ammonia and Soutn Australian Pure Olive Oil are also in excellent demand. The following is an extract from the Colonist, December 21st 1901: —It will have been observed from a Press Association telegram which appeared in yesterday's issue that several jam manufacturers in Dunedin were fined for adulterating jam with other fruit pulp. Apparently the aurhorities at Dunedin have been testing all manufactures of jam on the market, for, yesterday morning, Messrs Kirkpatrick and Co., received a telegram irom their Dunedin agent stating that their jams had been analysed and found unadulterated. The analytical test was wade by Professor Black, and the result must be very satisfactory to the local firm, whose manufactures have always been advertised ms " purest and best."

The method, according to an exchange, is simple, inexpensive, and immediately practical. The string or wire suspending 111 rrors should be at least 6in long, so that the wind can blow it about and reflect the miii's rays ; the flash scares the biids, and does not become familiar t> them like a, stuffed scarecrow. A couple of minors are enough on a tree, but three or four are better ; they can be obtained cheaply, and according to various 1 eports can be used very effectively. The process of sterilising eggs discovered by Mr W. A. Ellis of Wellington, has been thoroughly tested, with most gratifying results. Nine months ago Mr Ellis, who was then in business at Stratford, tested a number of eggs by his system, and stored them in an ordinary iron-roofed building at Stratford, after getting them stamped with the date by the local manager of the New Zealand Loan and Merchantile Agency Company. The eggs were brought to Wellington a few days ago, andare found to be as wholesome as the day they were laid. One of them was cooked and opened up at the Agricultural Department the other morning and was as good as any new-laid e »S s - Th. 3 xpert was present, and pronounced the test to have been thoroughly successful. A preserved egg formed one of a parcel sent from London for testing purposes, was also examined by the department the same day, but did not open out in such good condition as those preserved \>y Mr Ellis, although it had only been packed two months.
