(To the Editor). , Sir. —I think the cooking exhibits at the Show were a credit to those who entered, and were worthy to be exhibited in any large centre. But one cake wa» disqualified by the judge, and I think the reason for disqualification should be made clear, for there are plenty of people who, like myself, consider the judge wrong in his ruling. The entry was 122, one pound cake. Now, Sir, the judge disqualified this cake because it contained 11b. of currants and 11b, of sultanas, whereas he held that it should only have contained •lib. of sultanas and lib. of currants, making 11b. in all of fruit. All my recipes for pound cake include lib. each of sultanas and currants. I have not discussed the subject with the exhibitor whose cake was disqualified, so have no interest one way or the other, except to clear up a point which may save bother at future shows. I- would like to get an expression of opinion from some of your lady readers on the subject, and your own opinion. —Yours, etc.,

PERPLEXED. [AVE should be jdeased to publish the opinions on the subject from any of our lady readers. Personally, we appreciate a piece of cake, but for tbe life of us we never give the ingredients consideration, nor —be it said to our shame —the “cook” the thanks that is her due. We would venture the opinion, however, that a pound cake means one pound of each of the principal ingredients. It would appear that the judge only allows 11b. of fruit, but as many varieties of fruit as the exhibitor cares to be included, so long as the stated 11b. is not exceeded. Is there not a difference’ between a pound cake and a fruit cake? Perhaps it would be as well for the Society to state more definitely what really does con- < stitute a pound cake. —Ed.H.]
