[to the editor.] Sir, —I noticed a very sensible letter in your issue of the 2nd inst., over the signature of “Justice,” — the mother of seven hungry children, who has my heartfelt sympathy, particularly if many of them are boys, for I was a boy once, and I know. The cash is alright for those who have the “ Spoudualphs,” but for those people who have to work a mouth before getting their wages, or have contracts, it becomes almost impossible for them to comply with this new combination. The mother of seven children wants to know how many 41b loaves 1 ton of flour will produce. Here is the statement of an experienced Wellington baker, which will enlighten your plucky correspondent. One ton of first-class flour will produce 675 41b loaves. I will here give you a statement of facts to make 1 tou of flour into bread : • ... ■ £ s d Flour, present price ... xi ip o Yeast 050 Salt ... ... ... o 4 o Potatoes ... ... o 4 0 Fireiug... . . ... v o 15 o Labour... ... ... Iko o Total £l4 8 o 675 41b loaves at 7d clear profit on a tou of flour ... ... 5 5 9 Total ... So that a baker baking three tons of flour per week into bread has the very handsome return of three mouths’ credit for his flour,_ and he wants cash before delivery, and further, he rises the price of bread on the coupon system 6 per cent., instead of reducing it, which would cause the mother of a family to almost jump on the baker or his man. I enclose a;, cutting from a paper, which 1 hope you will find a corner for in your valuable paper, viz; “The Dunedin Master Bakers’ Association decided while agreeing that 7d for a 41b loaf was a fair price for bread, with flour at 15s a ton, that the price from Monday next be 6d. The question ot cash sales was discusssed, but it was decided to adhere to the present system.—Yours etc., Jericho.
