Milk Testing.

The following is taken from Hoard's Dairyman, the leading dairy paper of America. It touches upon a matter which is of interest to suppliers of milk at New Zealand factories :—

THE VARIABILITY OF FAT IN MILK. Many patrons of cheese factories and creameries, where the milk is taken on the Badcock test, find themselves suddenly confronted with certain phenomena concerning the fluctuation of the iat in the milk, day m " after day, which is hard for them to understand. They say they feed the same ration to tbe same cows, and it does not look reasonable that there should be such fluctuations. t L The Dairyman has known of this fact in the experiments carried on by its editors for several years. Any man who will buy a Badcock tester and put himself where he can know and not guess at facts, will find out the same ; truths. r In the reported churn tests of tht '-if ! noted Jersey cow, Bisson's Belle, the same fluctuations of the butter return day after day were seen. The fact is, there is a tremendow lot for the dairy farmers yet to learn about cows -and milk. It will not do when confronted with some fact we do not understand to rush off as some do . and declare the Badcock tests is aU™;' wrong. Such statements made at this day and age simply advertise the ignorance of the man who makes them. If every cheese factory and creamery patron would buy a five dollar test machiue, it would correct, a lot of foolish notions, and beside give each . man a chance to know something positive about his cows that he does not now know.
