If it be true that a consignment of Ntw Zealand oysters preserved in ice which have just reaohed London, have bsen found in perfect oondition -^antd of excellent flavour, there will - bt joy among that large section of the population who lore oysters. They will, however, hare to laarn to eat them without their snails, as they ard sent over in tin boxes. Throughout the United States, the inland population eat them io, and consider that, when received direct from the coast, thty are as good at if < a«rr«d tip on their shells in Ntw York. It is said that they- can be supplied hare at one fifth of the prices of the English markets. The boxes are of two sizes, the one for domestic consumption, the larger ones for olabs and hotels, where the dsmand is' large. Doubtless, they will generally appear on table in •hells, and would be eaten with the belief that they were English oysters, just as the best mutton in the market is sold as English, and at Eng. lish prices, when in reality it comes from New Zealand. At any rate, for cooking, they would be "invaluaable. In th* United States the oyster is eaten in a vast variety of forms, stewed and scolloped, boiled and fried ; with us, the prices at pre•eat ate so enormous that a lunch of natives is a more expensive treat than a dinner of ten courses, and, indeed, is with very long purses. It is true that they are cheaper varieties in the market, but none in point of delicacy or flavour to. compart with those gathered at the at tht mouth of the Thames. For soms reason or other, we havt never taken to oyster culture, although it is practised on a very large soale, and with most satisfactory pecuniary results, on the western coasts of France. If, however, oysters as good as oars can be sold at one-fifth tht present price, we need not trouble to raise them. At any rate, we can assure our Australian friends that that do matter how large the oonlignment sent over, they will com* mand a ready sale.— London Evening SUndard.
