A New Industry in Dried Rabbits.
The N.S.W. Department of Agriculture has received from the AgentGeneral , a letter enclosing a communication from one of the largest firms of game food manufacturers in England on the subject of dried rabbits. Provided the rabbits can be sent in a suitable manner this firm is prepared to take no less than 150 ions during next year at a payable price, and it is considered every succeeding year for some time to come the sales will more than double themselves. For the purpose of engaging in this novel industry snitable dessicating machines would be required, and the Agricultural Department is now conducting a series of experiments to ascertain the best way of drying rabbits. The results of the expHriments will be made public in due course. It is p inted out that one advantage of this process would be the very great saving in freight, as the rabbits could be split open like fi^h, dried, and packed in the smallest possible com* pass. Being dried, also, there would be a great reduction in the weight, and it is believed that the freight would not exceed 85i per measured ton.
