BONNE BOUCHE.
Chicken Hash. — This is a nice way to sei ye for breakfast any chicken or turkey left over from dinner. Mince, but not very fine, and to a cupful of meat add two tablespoonfuls of butter, half a cap of milk, enough minced onions to flavour, with salt and pepper to the taste. Stew until done and serve on toast. Hop Beer. — Five gallons of water, £lb of hops, tied in a bag, 81b of very dark sugar, lib of raisins, lib of honey, and £lb whole ginger (bruised). Boil the hope, ginger and raisins in the water for three hours, then remove the hops and put in the other ingredients, and allow the liquor to remain on the fire till the sugar is quite dissolved. Place the liquor in an earthenware or wooden tub to cool, then put in half a oup of good yeast, and as it works skim off the top. After standing for two nights, bottle and string or wire down,
