SUGAR OF MILK.

At a r«cent meeting of dairyman in a Wairarapa district, Mr C. Dahl gay c an outline of the process of manufacturing sugar of milk. * It took 8,800 gallons of whey to make one ton of sugar of milk. The whey was put into large ■hallow pans with double bottoms, 10ft 6ins, in diameter and about 21 inches deep. Steam was applied and 75 per cent of the whey was evaporated and the albumen coagulated. This was now skimmed and filtered. Steam was again used to reduce the mass to the consistency of porridge. It was then left a day when it crystallised. There were then further washings and chemical treatment, and then the crystals underwent the refining treatment.
