FRUIT CAKE. A nice fruit cake may be prepared as follows :—Take lib. of raisins currants, quarter of a pound of citron, one pint of brown sugar, one grated nutmeg, one tablespoonful of ground cinnamon, fourth of a tablespoonful of ground cloves, four eggs, one cup of butter, one cup of sour milk, four cups of flour sifted three times. After all is mixed together sprinkle in a dessertspoonful of soda. SELF-RAISING FLOUR. Flour, 71b.; cream of tartar, 30z.«; salt, £oz.; bicarbonate of soda, lh oz. Mix all well together by passingthree times through a sieve, and then put away in an airtight tin or box, and keep in a dry place. It is ready for use as soon as mixed. This is good and pure. _• DATE CAKE. butter, }lb. sugar, 6 eggs, Jib. dates, 1£ breakfastcups flour, 1 teaspoonful good baking powder. Mode —Beat butter and sugar to a cream, add eggs two at a time ; beat well, add flour, powder and fruit. Bake 1£ hours.
