IRISH STEW
Mutton, onions, potatoes, pepper, salt, water. Cut lib. scrag end of neck of mutton into small pieces, taking- off surplus fat ; peel two onions and slice them ; put the meat and onions into a saucepan ; pour on one pint of cold water, and season with pepper and salt. Cook gently for three-quarters of an hour; then put in 21b. potatoes which must have been previously pared and sliced. Let all simmer for nearly an hour, or until the potatoes are ready to mash. Serve on hot dish.
