BUTTER MOISTURE.

THE DEPARTMENT AND DAIRY BUTTER. It is not generally known that in order not to inflict undue hardship on private buttermakers, the Department of Agriculture has made special provision to meet them. Manv farmers find it necessary or deem it advisable to make up their own cream into butter, the majority of those duing this being in the backblocks. Those people have had some difficulty during past season in making a butter that complied with the requirements of the law in regard to its moisture content. This was due to the lack of proper facilities for handling the cream and to the excessively warm weather experienced at the height of the season. Much butter of this class, which could not be exported, was reaching the grading stores, and this season arrangements were made by the De partment of Agriculture to establish a depot to which all butter of this nature could be sent. For a very small charge, it i's re-worked by the department, and prepared for export, thus saving the settlers affected much anxiety. It was felt by the department that it would be unfair to take legal action against these dairymen, who, owing to the circumstances, could not avoid the defects in question. The assistance given by the department has been greatly appreciated, and the owners of the produce have willingly fallen in with the scheme.
