To flavour milk with coconut pare' off the rind, grate nut on a fine clean grater and add 3oz. to a quart of milk. Raise the temperature gradually and let milk simmer very gradually for 45 minutes, then strain through a seive or cloth, pressing the milk well from the nut. Milk thus flavoured is nice for custards, blancmange puddings light cakes or bread. Any milk contained in the coconut may be added. This cream jelly is different from ordinary jelly: Melt jelly with boiling water, allow to cool a little, then add a small tin 1 of Nestle’s cream mix ed with half a cup of milk. 'Stir all together and when cool set on ice. Jelly sinks to the bottom and curdly cream mixtur is on top.
