FRUIT GINGERBREAD
Ingredients : Half a pound: Of flour, 4oz. of butter, 4oz. of sugar, a pinch of. salf, half a teaspoonful of bicarbonate of soda, a small teaspoonful of ground ginger, one tablespoonful of golden syrup, two ounces of. glace cherries, two ounces of. sweet almonds, one egg, h .lf a teacupful of milk. Beat together until a soft and creamy mixture is ’obtained. Mix tl ; e ginger a,ndi salt with the flour and sift them. Beat the egg well and mix it with the syrup. Add them to the, butter and sugar, then add the flour gradually, beating we]l all the time ; then the. cherries and almonds, blanched ajid sliced. Make the milk just lukewarm and dissolve the bicarbonate 'of. soda in it- Mix this well with the other ingredients, and turn into, a good block tin that has been lined with greased paper, and. bake for one and a quarter hours in a slow oven. When, the cake begins to brown cover it with buttered paper-. Gingerbread cakes need careful baking, as they burn very easily on* account of (lie syrup' in theni. The oven must be quite moderate.
