RECIPES.

POTATO DUMPLINGS. Sieve four large belled potatoes, stir into 6oz of flour, add one teaspoonful of grated onion, two tablespoonsful of chopped parsley, salt and pepper to taste. Mix to a smooth dough with an egg, beaten up with three tablespoons of milk or water. Shape into small balls, droip into a ian of boiling water, and cook for 15 minutes. Drain well. These make a tasty luncheon dish coatejd with cheese or tomato- sajice and served! on hot buttered toast. POTATOES AU G.RATIN. Sieve 11b of cooked potatoes, season, stir in loz of butter, 1 gill of hot milk, and a beaten egg. Put into a buttered! fireproof dish, sprinkle thickly with grated, cheese, pour over a spoonful of oiled butter and brown in the oven. SAVOURY POTATOES. Cut up lib of peeled potatoes inti) thin slices. Put them into a pan with * 2oz of grated cheese, salt and pepper. J ust c.over with stock and cook gently for about -20 minutes. Drain and turn into pie dish, sprinkle with gratejd cheese, and brown in the oven. PORK AND APPLE PIE. Remove the bones from 1 to. 21b of pork cutlets, taking off the meat in one piece.
