VEAL FOR EXPORT.
AN IMPORTANT INDUSTRY., HUNDREDS OF MEN EMPLOYED. The boneless veal trade in the Waikato. has grown remarkably. On Tuesday (states the “Times”), .97 trucklojads of “bobby” calves were ‘handled a.t the Horbtiu'freezing works, and it is estimated that about 4000 calves were killed. The full • bench of butcherjs was kept busy. Mr S. Lye, managing director of the Waikato and Thames Valley Co-opera-tive Calf By-Products Company, estimates,i e tha.t the industry is now, -at the height of the season, giving, employment to about 500 men in carting, killing, and other operation,s associated' with the trade. His own company gives direct employment to 150 men at present. Mr Lye states that the ; company is now paying out between £7OOO and £BOOO a. week in purchase of calves, wages, eitc. The average quality, Mr Lye informs us, has inproved ‘and the proportion of rejects lias! been lowered-, but is still far too-.high. Many farmers of making the mistake of thinking that a big-framed calf must be acceptable, whereas it. is condition that counts more thaii si'ze .
