THRIFT IN THE KITCHEN.
CAREFUL HOSPITAL STAFF. FRUIT REQUIRED FOR JAM. At Monday’s meeting of the Thames Hospital Board Mr J. W. Danby drew attention to the splendid service that was being given by the kitchen staff under the able superintendence af the matron (Miss K. M. Ansenne). Mr Danby said that not only was the staff performing efficient work, but it was also exercising care and economy. For instance, from the kitchen fat soap was being made, and in that direction enough s :j 'ap was made to supply the needs of the hospital. The average amount expended on soap was about £3 a month, but now, for an expenditure of 18s lid enough soap of good quality had been made to last two months «r more.' Quite recently the meat b nes, which had been carefully stored up and amounted to about 6cwt., had been sold for £1 and the money used in purchasing extra, equipment for the kitchen. This industiy saved the board money. With the ex-, ception of a few tins of raspberry jam for cooking purposes no jam had been bought during the year. Approximately 6381 b of fruit, of which amount only 2181 b was purchased, was made into jam at the hospital, kitchen. An appeal was now being made to the public for donations of fruit for jam-making purposes, and it was considered that there were many persons who would gladly give fruit when they knew it would be thankfully received.
Several members expressed appreciation of the efforts of the matron and her staff.
