EMPIRE XMAS PUDDING.
AN INTERESTING RECIPE. < From the Empire Marketing Board a copy has been received of a recipe for an Empire Christmas pudding, which Mr Cedard, the King’s chef, has supplied to the board. As th© recipe appears in plenty of time before Christmas, it will be found very useful. It is interesting to note that the King’s chef includes in his ingredients 51b of New Zealand beef suet.
Thq recipe is as follows : 51b‘ currants (Australia), 51b sultanas (Australia), 51b -stoned raisins (South Africa), l%lb minced apple (Canada), 51b bread crumbs (United Kingdom), 51b beef suet (New Zealand), 21b cut candied peel (South Africa), 2%1b flour (United Kingdom), 2%1b demerara sugar (West Indies), 20 eggs (Irish Free State), 2oz ground cinnamon (Ceylon), l%oz ground cloves (Zanzibar), l%oz ground nutmegs (Straits Settlements), 1 teaspoonful pudding spice (India), 1 gill brandy (Cyprus), 9 gills ram (Jamaica), 2 quarts old beer (England).
