HIGH-GRADE BUTTER.
CLEANING MILKING MACHINES. BOILING WATER ESSENTIAL. That absolutely boiling water only should be used for the washing -if milking machines and all dairy utensils was.advocated by Mr A. E. Missen at the quarterly conference of the N.Z. Co-operative Dairy Co., Ltd., yesterday. This, he said/ was the only sure means of eradicating and’- checking the growth of bacteria in dairy equipment, and he cited a most interesting case in proof of his argument. A supplier who kept her shed in perfect. condition was consistently given second grade for two weeks; The dairy instructor was sent put, and he reported that so far as cleanliness was concerned hothing more could be desired. The factory manager concerned paid a visit, but could not find the trouble. The cream still came in showing very bad flavours, and sometimes almost boiling out of the can. The company’s head grader visited the shed, and, after investigation, said he was satisfied the trouble was bacterial growth in one of the machine < pipes. A supply of absolutely boiling water was secured, and with a touch of chloride of lime put through the machine. The next day’s cream was superfine, and it had continued superfine ever since. By this means, Mr Missen pointed out, the company, endeavoured to assist every supplier tc eradicate any trouble experienced and supply a superfine article, thus benefiting the supplier and improving the country’s credit for high-class pro. duce.
