DOMINION BUTTER
AN INTERESTING COMPARISON. WITH OVERSEAS ARTICLES.* (Per Press Association — Copyright.) AUCKLAND, July 19. . Among the exhibits at the Auckland Winter x Show we.r.e samples of butter obtained from the following countries:— Esthonia, Finland, Denmark, Sweden, I the Netherlands, Latvia, Russik, Ar-I gentine, South Africa, and Fiji/ (two)'. These butters were examined by Government graders whos^.comments were made available to-day..- f‘i ; ; 1* . An analysis shows that, uvhereatf New Zealand butler ‘-usuaiUy has. 16 per -cent, moisture, -fat^'/cqjttfent. 82, and salt H to 2, none of the overseas butters has moisture in excess of 15.90 1 . The Danish figure, is 13.80, Russian 13.10. The fat ranges from 81.45 (Fiji) to 84.80 (Danish).
The Fijian salt percentages are 2.25 to 2.85. Others range from .65 to 1.70. The Russian arid Siouth African specimens are described as having, a. strong and unclean flavour,’ and the Danish as of very high colour, excess of acidity, good body and texture.
