The Department of Scientific and industrial Research has issued a report on freezing storage transport of New Zealand lamb by Doctors Ezer GriffitOs J. It. Vicker.y and Mr R. R. The report deals principally with the question of how to preserve the, bloom or freshly-killed appearance, of meat' and the prevention of loss by evaporation of water from the carcase Under the present system, the cooling freezing transport storage, the report says, a good deal of bloom must neces-, sarily be lost. To preserve the freshiy killed appearance, evaporation must be considerably reduced. The most feasible .means of doing this appears t° be covering the carcases, as quickly as possible with bags impermeable to water vapour. The, bags should be odourless and sufficiently strong to withstand handling, and the cost should Compare, with that of the usual stockingette wrap, but should not-be such as to cancel the monetary advantages gained by the lower losses of and bloom.
