Tim executive of itlie Taranaki branch of the Friesian Association today discussed the questions of standardisation and tho system of payment for milk. A circular letter from Messrs Lovell and Christmas, of London, was brought before the meeting. ated. The texture was too open, the cheese developed cracks after cutting, and there was a tendency to discolouration, while in some cases there was a strong rank flavour. (Regarding the system of payment for milk the chairman (Air C. A. A 1 archant) said the present system had grown up with the industry, 'but tlie fact that no progress had been made was directly due to the present Director of the Dairy Division, who did not move with the times, ft was quite possible to make good standardised cheofse. but some '.managers had made* a point of incorporating all the moisture possible, and one result was that at Home some cheese was found exuding pure whe.v. Good standardised cheese could be made if tlie factories set out to make good linn cheese. The present grading system and outlived its usefulness. The grading should be at the other end. but he accepted the assurance of the authorities that there were great difficulties in the way. Ilie making of good cuee.se was impossible while some factories put in 42 per cent of moisture. To-day there were malpractices in making cheese which should not he permitted. The movement for a changed system of payment of milk was not for tlie lx l unfit, of any particular breed but a matter'of justice for the whole industry. At the conference to be held shortly at Hamilton the Director pf tlie Dairy Division would hear more about standardisation than he ever had before. The operations of some factories had done damage which it v'ou-id take many years to rectify. The industry should set to work to put its house in order. The tronlolo arose, from factory directors demanding the highest possible yield instead of the highest possible quality.
