DAIRY CONFERENCE

An important conference convened by the National Dairy Association was hold to-dav to consider problems affecting the manufacture of cheese. Representatives were present from all parts of New Zealand, also Mr Singleton (Director of Dairy Division), E. Givi Ilian (Assitant Director). Ah' A- Morton (President, of the National Dairy Association) .presided. The Chairman explained that the meeting was held relating to two remits brought fonvaird at V hangarei in June but which were .deferred pending the return ol Mr Singleton from his trip abroad. Tlie. remits follow: —(A) That Lit content be stamped on every crate of cheese by Dairy Producer Graders, that the words standardised, modified, be eliminated from the Dairy Act and cliceso sold 011 its merits, or in other words fat content.
(B) That cheese made during the months of Alarch and July, inclusive, containing under 52 per cent hut no less than 50 per cent fat in dry matter he allowed to lie exported under the standardised brand as still in accordance with the brand on tne crate, but that it may be graded second grade if the Department considers the quality likely to be lowered by the difference in fat content. Experiments being conducted at Longburu showed a varying minimum of fat requirements for different periods of the year. If they were going to change the regulation lie was of opinion it should he in the direction of increasing the percentage at certain periods of tin; year. Air Singleton added that lie die not want diversity of brands as it would produce chaos on the market. Advices received by the Dairy Boaid and the Dairy Division definitely opposed. the export of modified cheese. It was decided that the voting be on a basis of one vote for,each fac-

The amendment to the fii's.t remit was defeated.
