Take 4 ozs seM-iuisiiiig flpty-; 3 ozs better, 2 ozs castor sugar, 2 eggs, the grated rmd oJ! jiaiif a lemon, 12 dorops leanon-juiee; Cream butter nntl sugar, whip tho Av^iites and' yotlkes of eggs sieparateiy.; Acid the -jrolks to the; buY ter-and sugaa- an.d beat till siaooth; stir in the lemon-rind, u^i juice, then gradtually the flour, and lastly, foM in the egg-whites. Turn into a well-greased fairly shaJloiv tin and bake in a moderate oven a!bout one -L.OU3-. * 'Light Arrowroot Sandwich. Beat for .15 minutes, 2 eggs, 1 cup sugar and a few drops of essence, then add i cup arrowroot, Z tea&poon bicaribonatc of soda and 1 teaspoon cream of tartar ,(br 'i.% teasfpobon baking-pQw,der), these ha^ri^^fbeen sifted thr«e times. Stir a^l.;i>o(gether and -bake in 4-imch° teak© time in a fairly ihbt oven; don't* open the oven for 20 minutes.
