Economy Plum Pudding.
Two cups flour, 1 cup sugar, 1 cup strong cold tea, 2 teaspoons bicarb, soda, loz butter ,1 cup currants, 1 cup stoned raisins, 1 cup sultanas, a little chopped lemon-peel. Heat butter and sugar in a basin, add flouT and fruit. Dissolve soda in the tea and mix well. Boil in buttered basin 2J hours. Sierve a^fc once. . Solomon Gnmdy. - IMiis is a paste to use as a savoury or for tasty sandwiches. Take a tin of sardines, some very finely chopped onions, a little vinegar or a little lemon juice. Mix these t&oroughly, seasoning with pepper and salt, and serve on hot buttered toast or on buttered sao bis- ■ cuits. ' ' . ■] Steamed Hah, Here is. a delicious way to cook fish for a sick person. Prepare fish in. small pieces, roll each fillet wit& the white side oi»!t, and place on a buttered plate; sprinkle with salt, pepper and lemon juice. Pour on about 2 tablespoons of milk, dot the fish with pieces of butter, cover with lid and place over a saucepan of boiling water. Cook till tender (about 20 minutes). Serve hot with, white sauce and garnish .with, finely chopped parsley. ■•'■> A liemoß Cake. , Grate the rind of a large lemon and' extract and strain the juice. Cream 2 ozs butter and 4 ozs sugar, add 2 eggs, singly, beating each well. Next stir in the lemon rind and half the juice, then 4ozs: of sifted self-raising flour. Turn into a round cake tin lined with ;buttered .paper, and bake at once in a hot over from 20 to ID minutes, "When quite cold, ice' in the following manner: Mix the remaining lemon juice with $ teagpoon cold water, then , stir in aa much icing sugar as will make a t>Mn" ptste. Spread over top of cake, and leave to dry in a cold place. The cake is good without any icing.
