SPECIAL “TRIBUNE” RECIPES.
FOR THE CHRISTMAS SEASON. A reliable recipe is given each week, specially chosen as a practical help for each season of the year. CHRISTMAS CAKE (Tested). lib. butter, lib sugar. 11b. lOozs. flour. IJlbs. mixed peel, raisins, dates, walnuts, sultanas. 1 tablespoon golden syrup 2 teaspoons baking powder, little spice. 12 eggs. Beat the butter and sugar to a cream, add the eggs unbeaten, three at a time: then the golden syrup, flour and fruit. Cook slowly. THE “E. B.” FRUIT CAKE (Tested.) (By request.) The following is an excellent and sufficiently rich cake for Christmas. 11b. sugar, 11b. butter or good dripping (or mixed), 2lhs. flour. 21bs mixed dates, lalsins. sultanas, peel. jib. golden syrup, 5 eggs. 1 teaspoon mixed spica. 1 teaspoon nutmeg, 1 teaspoon cinnamon. 1 teaspoon of carbonate of soda dissolved m 3 cup ot hot water. Method Cream the , butter and sugar. Add the eggs, beaten. Then the flour, a little at a time. Mix the hot water, soda and golden syrup and pour in. Then add the remaining ingredients, bake in a moderate oven 2 to i hours. PLAIN FAMILY FRUIT CAKE Tested.) 2 eggs. i cup good dripping. 3 breakfast cups of flour. About 1 cup milk. 1 small cup brown sugar. 1 cup treacle. 1 cup raisins. 1 cup mixed fruit. 2 teaspoons baking powder. Method.—Beat the sugar and tat. Add the two eggs, beaten. Then the flour. Then beat in the milk, and add the fruit, etc. Bake in a good oven about 1J hours.
