A Canterbury paper just received, informs us that an industry which bids fair to become ere long of considerable importance to the province has been actively but unobtrusively pursued in Christcburcii f>r some months past—viz., the curing of bacon and hams. From two establishments in this city large quantities of bacon and hams have been shipped to Westlaud, Auckland, and Otago, where their superior quality has caused them to meet wish a ready sale. The pigs to be made into bacon are brought to the establishments ready killed and dressed, and the meat having been properly pickled is smoked, an article quite equal to some of Sinclair's celebrated hams and bacon. Those who wish well to Canterbury will be glad that attention has been drawn to this new source of wealth, as it will not only be a means of profit to those engaged in the uianufacfacture but aiso to the fanners who supply the meat, whose refuse and damaged corn can he turned to good account in feeding pigs. It is tine that for • some years bacon and hams have been made in the province, but it is only lately that attention has been given to the art of curing so as to produce an article that shall not only keep free from taint but shall be juicy and in which the fine flavor of well feu meat is retained.
