THE MANUFACTURE OF BUTTER.

Within the last five years (says the Canterbury Press) an export, the product of a local industry, has sprung up, which, although small at first, has at length reached to the value of "several thousand pounds annually, aud promises to become of still greater magnitude. We allude to the manufacture of butter. For some time past large quantities of butter have been sent from Canterbury to Westland and the Australian Colonies, and recently shipments have been made to England. These latter, although not opening in very prime order, owing probably to defective curing, still sold at such a price as to leave a pretty good margin for profit. Only a short time since a shipment of butter, valued at from £ISOO to £2OOO, left Lyttelton for the mother country; and from what we have heard we believe that during this season shipments of butter are likely to be made on an extensive scale. Indeed, we know that every effort will be made to improve the method of curing so as to turn out an article, which will not only stand the homeward voyage, but open in first-class condition upon arrival. Orders to a considerable extent have been giyen for casks, and these are being made of kauri pine, which when well seasoned makes a water-tight and air-tight cask. Care must, however, be taken that only staves of souud and perfectly seasoned wood are used, as any others, such as sappy or spongy pieces, are worse than useless.
