BOILING DOWN OF SHEEP.

It seems to he generally conceded that a more ready market will be found for the preserved meat than for the extract ; but those who 'have taken up the matter in this city do not appear to see their way clear to entering upon the manufacture of cither on a large seme just at present, simply because of the expensive machinery which would be required. Mr. R. Caldwell, however, slated at a meeting lecentiy held, that lie bad organised, at his own expense, a meat preserving establishment, and that the result ot his experience with seven or eight tons of meat enabled him to say that, by a process already known fM'CrnckeiTs), I,UOO sheep per week could be boiled down and the m»at preserved, leaving a balance of profit at ‘the end of a year of £dj,sdt ds. -Id. In fact, lie reckoned that lie could make each sheep w orth dOs.. while by the simple bo;l;ng-down process, ! which by itself pays well, only (Is. or 7s. is realised ;from each animal. Mr. John Van llemerf is ihe patentee of another process for boiling-down and preserving shia'p, winch is also Wall spoken of. Several lire!lags have been held on the subject, iwhith liav, r. .nited in the formation of a public r-.npauy, w.lh a capital of £ 1.j.0U0. It is proposed to commence with boiling-down, and to purchase plant for the additional processes of preserving meat and obtaining the extract, ns soon as funds are available. Should tills experiment sue. 1. as it in ail probability will, the form Hon of inner companies will quickly follow.
