MRS. L. W. GOLDFINCH SHOWS GUILD MEMBERS HOW' TO ICE A XMAS. CAKE

Auticipating a most instructive afternoon, many of the members of the arts and crafts circle of the Hastings Townswomen's Guild were present at the final meeting for this year, which was held in the W.D.F.TJ. room yesterday. In the early part of the meeting the circle leader, Mrs. L. "W. Goldfiuch. was unavoidably absent, and the deputy leader, Mrs. W. A. Bryaut, was in the chair. The circle secretary, Mrs A. 0. A. Hyde, was also present. The competition f,or the day was the best article suitable for a Christmas present to cost got more than one ehilImg, and resultea as follows : Mrs. C. Lassen 1, Mrs. Rood 2, Mrs. Kelly_ 3. Many of the articles for competition were later given to the bring-and-buy stall, which did good business. Jl most interesting roll call, "My Best Recipe," was answered by many of the 'members, who gave recipes which had been well-teBted and proved to be delicious. The recipes will appear one at a time in these columns, and wise readers will cut them out for future use, a§ an opportunity to make a collection of such splendid recipes does not often occur. Mrs. A. F. Glenny, the guild president, announced that the civic circle meeting had been postponed until Wednesday evening at 8 o'clock, and mem- j bers would then be fortunate enough to hear Mrs. Renneth Gordon, of Auckland, give an address. Afternoon tea was enjoyed by everyone, and this was followed. by the main attraction of the meeting, a demonstration on how to ice a Christmas cake, shown by the circle leader, Mrs. L. W. Goldflnch. The demonstration was most appropriate for this time of the year, when thoughts are turning _ towards Christmas and the fare for this season of the year. While giving her demonstration, Mrs. Goldflnch gave a wealth of useful information. The demonstration was watched witb great interest by everyone, and Mrs. Goldflnch explained each step as she did it. She gave the recipes which she used for the almond icing and f°r the Royal icing, told the members how to make the cake a good shape and how to colour the icing. Also,' as she used each different syringe, she told its uumber and explained the various ways of using each. She advised members to make bags of waterproof sheetiug to fix onto each syringe aS these were much le8s tiring for the hands than the usual metal contajner, and also for the unexperienced she suggested practifeing with mashed potato on a piece of cardboard. The cake was given the almond and Royal icing several days beforehand to allow it to be well set, and then if a mistake was made in the decorating it 1 was easily reittoved.

Mrs. Goldflnch decorated the cake with pink icing with "A Merry Christmas" beautifully written in, the centre and latticed circles in each corner outlined with tiny daisies with silver cachet centres. Round the edge was a shell design with cleverly-made fence etfect, and on the side a scalloped de-

? sign. The finished cake was most beautiful, and Mrs. Goldflnch was sincerely thanked for giving the members such a profitable afternoon. Tlie members' attention was drawn to the final entertainment for the season by the music circle, which proinises to be a splendid evening. Much time and trouble has been spent rehearsing and arranging the opertta to be held iu the Oddfellows' Hall on Decembev
