Oyster Pie One plnt oysters (2 dozen are ample), | 2 cups rich white sauce, 1 cup /cooked j celery, seasonings and pastry. Line a j baking dish with pastry, fill with un.- i cooked rice and bake in a quick oyen. | Shake out rice from pastry shell and fill with the following mixture: Make a rich white sauce with flour, butter and milk, and season with pepper, salt and grated nutmeg. Heat oysters in their own liquid until the edges begin to curl, then add to the sauce mixed with chopped celery. Cover with a layer of pastry, making slits to allow steam to escape, and make until golden brown. Oyster Cocktail Mix together 1 tablespoon of freshlygrated horse-radish, 1 tablespoon of vinegar, 2 tablespoons of lemon juice, 1 tablespoon of Worcester sauce, 4 tablespoon of tomato catsup, 1 teaspoon of salt and a few drops of anchovy sauce. Put on the ice until thoroughly cold. Put 4 oysters in each glass and add IJ tablespoons of the well-shaken mixture. Oyster Mornay One and a-half dozen oysters, f cup grated cheese, J lemon, 1 cup milk, 1 tablespoon butter, 1 heaped tablespoon flour, i teaspoon mixed mutard, } teaspoon salt, a pinch of cayenne pepper. Bemove oysters from shells and pour ofl liquid into a cup. Sprinkle shells with;a little grated cheese and replace oysters. Melt butter in a saueepan, add flour and cook for a few seconds, then add milk and oyster liquid and stir nntil it boils and thic]tens. Bemove from fire and add \ 'cup grated cheese, salt, pepper and mustard, and squeeze of lemon. Cover oysters with cheese sance, then sprinkle them with grated cheese and a few .dried breadcrumbs. - • Place nnder a hot griller nntil nicely browned and servc at once.
