GRAPEFRUIT
Grapefruit havo healtli-glving properties— the jiiice being very beneficial to sufferers from indigestion, especially if takeii after meals. For reducing purposes they are excellent if -eaten without sugar. To Prepare Grapefruit for Breakfast. Wash and cut the grapefruit in halves, cross-wise; cut around the outer edge of the pulp with a stainless knife. Snip the conneeting membrane with sharp scissors and remove it with the centre portion, too, ' leaving the pulp whole. If liked sweet, fill the centre with sugar and let stand for two hours, or overnight, if more convenient to prepare it. For a luncheon appetiser serve without sugar. The tonic properties of grapefruit are increased if sugar is not added. When selecting the fruit, remember that the best are large and heavy, and inclined to be flat-shaped, and do not contain as many pips as the smaller varieties do. Brownish streaks on the slcin are usually a sign of sweetuess, and a thin skin denotes juiciness. Grapefruit and Orange Salad. Skin; and remove pith from the fruit and divido . into small pieces. Minee an apple very finely. Put grapefruit and orange into glasses and spread apple p" ip over it. Sprinkle with sugar and chopped walnuts (fine). Serve cream separately.
