Orange Ginger Marmalade
Puke (jlbs of swcet oranges, 0 pint,- oi water, Olbs of sugar and ^Jb luuip of ginger. Wipe the oranges, pcel them and divide thein into quarters, removing the pips as you do so. Put the peel through the mincer and then put it into the preserving pan with the water and orange quarters. Bruise the ginger, tie it in muslin and add it. Bring it to the boil, add the sugar, and, when dissolved boil the marmalade until it will jelly when cold, keeping it stirred \ and skimnied as required.
