Ground Rice Cheese Cakcs

Ingredients : 0 ozs margarine, 6 ozs. castor sugar, Gozs. ground rice, 1 egg well beaten, milk, lemon or almond essence to taste, jam. short pastry. Method : Cream the fat and sugar, add the egg and ground rice with enough milk to make into a creamy mixture, then stir in the almond flavouring. Line two large or 2 or 3 dozen small tins with short pastry, put a little jam in each, put the mixture on top and bake in a hot oven. Time, 30 minutes for large and 15 minutes for small tarts.
