Peel and slice the apples, blanch and chop ■ the almonds and add with the raisins. Cook very slowly in a saueepan with the sugar, lemon juice and rind and water until the apples are almost teuder. Cool, then arrange over the pastry, dab here and there with tiny bite of butter. Sprinkle with cinnamon and bake till the pastry is cooked. Eemove from the oven, cool, beat the egg white till stiff, stir in loz. of castor sugar, spread over the pie, sprinkle lightly with more sugar and brown delicately in a very slow oven. It is hot enough if the oven is turned off once it is thoroughly heated.
