Government Dairy School.
1 -o — ' We are indebted to Mr J. B. McEwan, Chief Dairy Expert, for the following particulars of the working of the State Dairy School at Stratford : -The school was in operation from Ist August to 81st August. The number of students attending the school was 107. Milk was paid for according to quality, as shown by the Babcock milkjtester, at the rate of lOd per lb of fat, delivered at Strat- . ford. The quantity of milk supplied was 67,5071b5; the quantity of fat delivered in the milk was 27171b5; the average percentage of fat in the milk was 402 per cent ; tbe lowest percentage df fat in tbe milk was 3 42 per cent ; the highest percentage of fat in the milk was 480 per cent ; the quantity of batter manufactured was 22441b5; the qnantity of cheese manufactured was 18481b* ; the average number of pounds of batter per pound of fat was l-091bs ; the average number of pounds of cheese per pound of fat was 2-55lbs ; the average price paid for 101b of milk delivered at Stratford was 4-03d ; the lowest price paid for 101b of milk delivered at Stratford was 8-42d ; tno highest price paid for 101b of milk delivered at Stratford was 4-52d.
