In his letter of Saturday last " Pessimist " made reference to the subject matter of a speech given by Mr Duthie, M.H.E., in the Chamber of Commerce, Wellington, a few days after his return from England. Of the frozen meat trade, Mr Duthie said that one of tho breakdowns was in the delivery. He had found that delay took place in the docks in landing, and that the temperature was not always maintained. The carcases were transferred up the Thames a considerable distance in barges not insulated, nnd they became softened and lost their shape. In summer months, especially, the carcases must get out of shape. He had not had much time to go amoDgst people engaged in the butter trade, but the carelessness that had been spoken of was applicable in this case, and it largely accounted for the butter not fetching a better price. There h;vd been a scarcity of butter all the soring, and really first class butter had fetched a very big price. If they did not get a very big price for the colonial butter it was because it was not up to the mark. As to the grading of the butter, he had made enquiries in several quarters, and had found that yery little value was attached to it. The butter, which might deteriorate on the passage, had to be examined, and sold upon its merits. The shipments must be ?x aniined by buyers, and that he thought was only reasonable. Tho butter trade was a very important matter, because if it were not maintained ho did not know what tho small settlers could turn to.
