A Hint to Butter Factories.
In support of his contention that batter should be shipped to London in lib pats, Mr G. S. Jakins, a gentleman connected with the trade, points out that after being purchased by the retailer in Great Britain he has to thaw it, and, after thawing, " pat " it up into marketable shape for the consumer. By this means no justice can be done to the butter; because its keeping qualities are deteriorated by the working which it receives after bein^ thawed. The expense of freight, if it were put up in single pounds, would be no more than at present, for the butter could be so packed that no space would be wasted. The consumer would get his butter as it left the Australian creamery or factory without the handling and re-making up which at present seriously affects its quality. The retailer would be able to sell an article more likely to give satisfaction, and would not have the trouble and expense of putting it up into separate pounds or pats. When purchased by the consumer it would thaw in his kitchen, and every retailer could obtain his supply from the cool chamber twice a week. Mr Jakins states that in New Zealand he has experimented with butter put away in a frozen chamber in bulk, and then re-made up at a proper factory, and as compared the result with similar butter put away in the cool chamber in pouods, and he has found that the keeping quality of the butter put away in marketable shape — namely, pounds — has far exceeded that of the xe-made up article.
