As the Dairy Act passed last session is now in operation farmers and others interested will do woll to note that " Every person supplying milk to a dairy, factory, or creamery, shall, immediately the milk is drawn from the cow pass it orer a cooler aerator for tho purpose of being properly cooled or aerated." There must be no addition to the milk of anything what ever, and in the procoss of manufacture into butter or cheese there must be nothing but sugar, salt or colouring matter. All dairy produce exported has to bo properly branded according • to a schedule specially provided. The3e brands are to be applied through stencil plates qr by rubber stamps supplied by the Agricultural Depaitment, to the >ecretary of which application must be made. The weight of ibe gallon of milk aupplied to dairy factories is fixed by law, and mi.k must be pure and unadulterated, and autocratic power is given to in spectors under tho Act in compelling owners of dairies, creameries, and factories to keep tbeir 1 1 icos clean, and in prohibiting the sale of milk under conditions which he may regard a 6 iciaical to tbo interests of the industry. The Act as rovised by Parliament has not yet reached us, but the alove is a tolerably aceir ato resume of its chief provisions.
