In a letter to the Wanganui Chronicle " A Grazier "' asks the very pertiuent question " How Canterbury mutton ranges from $d to £d more in the London market than Wellington mutton." The reply is : That in Canterbury wetbtw only of a certain age, and maiden ewes, are killed, aud the carcases must be witbin certain defined limits as to weight. This secures excellence of meat and uniformity bf quality. On the other hand the custom in Wellington; has been to freeze anything that has wool and hoofs, irrespective of age or weight. The London, buyers are therefore always willing to give more for Canterbury brands because they know what they, are buying, which cannot be said of Wellington brands, although we know of carcases scut from this coast equal, if not superior, to Canterbury grown meat.
