TO THB EDITOR OF THE STAR. Bih, — We are now doing a considerable business in Australian and New Zealand cheese and butter,' and we think if shippers .would give the attention necessary to these articles a large and profitable trade would result. Only finest butter shipped jn refrigerators and in good condition when put oh board, can pay the senders, as any butters outside ' refrigerators arrive in this country in such condition that it is unfit for tablo use and can only be 9old as grease butter. - The best package, for this market is 56lbs, and in any. caee should/ not exceed 112lbs. , .The temperature in cold storage en voyqye should not be above 55 degrees, nor so low as freezing point. This applies to both, cheese and. butter. If frozen, both the butter and cheese ' lose their texture, and the cheese becomes so crumbly that finest goodswhen shipped arrive here to be sold as secondary qualities. We are satisfied there is a big future for New Zealand cheese, and they will get a preference to the bulk of the American cheese, that are sold in this market, as their keeping qualities are more on a par with Canadian and pur own Cheddar cheese. We think it would be advantageous to senders and buyers if cheese were shipped not so matured, as they ripen quickly on the voyage, and in consequence show flavour. The highest price can always be obtained for mild close cutting Cheddars. Having sold over 3000 tons American and Canadian cheese, also large consignments of colonial and continental butter during the past season, we can dispose to advantage all consignments sent to our care, and shall be pleased to receive direct, or through merchants in London with whom you may have connections. We have pleasure in referring you to our bankers, the Commercial Bank of Scotland, Limited London, and if desired shall be pleased to furnish you with an information we can. P.B.— The beat New Zealand butter has come in square boxes, and was really fine, and sold at 112s per cwt. Australian and New Zealand in casks, selling at 70s to 108s. New Zoaland cheese selling at 40s to 58s, according to quality. Danish butter to-day 112s, American and Canadian cheese, 50s, 545, 58s, and 60s.
