Milk Requirements
For Butter. — That the Globule should be of good size, or uniform «ize, and should be in abundance, i.e., a, large percentage of cream. Requiraaent best fulfilled by the Jersey, Ayrshire, and Dutch, in the order given. For Cheese. — That the globule_ should be so small as to remain mixed ■with the milk under all circumstances *.«., a white and not a blue.skim milk. Requirements b»st fulfilled by the Ayrshire. That the globules should easily re-mix with the milk after separation. Requirement best filled by the Dutch and the Ayrshire. For the Milk Retailer.— That fho globule should remain for a sufficient period mixed with the milk, so that «n evenness of quality may occur -during delivery to customers. Requirement best filled by the Ayrshire -and Dutch. Farmers 7 Requirement. — An abundance of yield under given circumstances. Requirement fulfilled in order— Ayrshire, Dutch and Jerseys. — Dr Stortevant.
