Baked Banana Steak. Carrot Souffle, Silver Beet, Jacket Potatoes. Apple Fritters.
Baked Banana Steak. —Choose a tender piece of steak; wipe it and slit one end open. Season with salt, pepper, and a little nutmeg. Cut three bananas in halves, lay them on one side of the slit in the steak, sprinkle with sugar, and cover with other piece of steak. Place thin slices of bacon on top, and fasten together with string or skewers. Place in a baking dish a little stock or water, and bake \ hour, basting occasionally with liquid in dish. Garnish with parsley.
Carrot Souffle. —Make a sauce of three tablespoons butter, 1-3 cup flour, and 1 cup milk. When it is boiling, add one cup mashed cooked carrots. When carrots are thoroughly heated through, reduce heat and add three beaten egg yolks. Season with salt and pepper and allow to cool. Whip until stiff three egg whites and fold them lightly into the carrot mixture. Butter a fireproof dish, turn mixture into it, and bake in a moderate oven for about 30 minutes.
